Now that we have spring cleaning behind us (yay!), it’s time to start inviting people over to actually enjoy the nice weather and longer days. As you could have probably guessed, my favorite part about entertaining is making food for it! I love a quality no-fuss dip to serve guests because it’s a great way to use up items you usually already have on hand and requires little ahead of time prep.
As a vegetarian, I lean heavily on nut butters like peanut butter to keep me full (hello, fiber!) and help me to get my daily dose of protein. With 8 grams of protein and 2 grams of fiber, it’s a no brainer to throw peanut butter into smoothies and lather it on toast. But I wanted to create a recipe that went beyond just breakfast – something that could be enjoyed all day long and even used to share with guests. And thus, this Sweet Peanut Butter Mascarpone Fruit Dip was created!
It’s a touch fancy with the mascarpone while the peanut butter gives it a nutty flavor and the honey lightly sweetens. Serve it with your favorite fruit – I like a mix of berries and sliced apples and bananas. If using sliced apples, make sure to toss with a little lemon juice to keep them from browning too soon. Oh and did I mention this dip takes under 30 seconds to make? A crowd pleaser and easy to whip up? I’m sold!

- 1/2 cup creamy peanut butter
- 3/4 cup mascarpone
- 2 Tbsp honey + more for serving
- 1/2 tsp vanilla extract
- dash of salt
- 2 Tbsp dry roasted peanuts chopped
- fresh fruit for dipping (strawberries, raspberries, sliced apples, bananas, etc)

Whisk together peanut butter, mascarpone, honey, vanilla extract, and a dash of salt until combined and smoothed.

Transfer to a serving bowl and use the back of a spoon to create circular grooves on the top of the dip. Drizzle honey into the grooves.

If serving right away, top with dry roasted peanuts and serve with fruit. If storing for later, cover with plastic wrap and stick in the fridge until ready to enjoy.
