This bubbly Pomelo Gin Fizz cocktail skips the egg whites and uses citrus to bring a subtly sweet and tart tang to your next happy hour.
They say that life happens in waves and I definitely feel like I’m riding one of the big waves right now. After a week in the Pacific Northwest exploring and photographing, I came home for 2 days (one of which we looked at a house and then immediately put a bid on it) and then hopped back on a plane for a vacation in southern Florida. For the first time in my Midwestern life, I smelled the salt of both the Pacific and the Atlantic in the same week! And if two adventures across the country weren’t exciting enough, the bid we put in on the house was accepted and we will be moving into the next phase with that this week!
While in Florida, we went to a small farmer’s market in a city outside of the Everglades. We stocked up on beautiful citrus that you just don’t see at the markets back in the Midwest. My two favorites were the pomelos (think grapefruit but slightly sweeter) and the most gorgeous pink lemons (<– these were so pretty that I filled my carry on bag home with them). The pomelo was so sweet that it would have been perfect for breakfast on it’s own but I preferred a few squeezes in my gin and sodas for a sweet and sour punch!
Traditionally, gin fizz cocktails usually have egg whites in them and although I totally trust the bartender to make me a rocking egg based cocktail, I like to leave that to the professionals (plus I really wasn’t feeling in the hot Florida heat). Because I didn’t want to use egg whites, I used soda water to achieve the fizzy texture in this cocktail. I’m a gin and tonic girl (hence all the gin recipes on the blog!) so this cocktail is not far off from a G&T. Make sure you are using quality gin (I love Hendrick’s) because the flavor will shine through. The pomelos we snagged at the market were super sweet but you can add a drizzle of honey if you are not so lucky with yours.

- 6 oz gin
- 12 oz soda water
- 4 oz fresh squeeze pomelo juice
- 1 oz honey (optional)
- Lemon sliced for garnish
- Ice for serving

Fill four glasses with ice.

Divide the ingredients evenly between 4 glasses and serve right away with lemon slices!

I don’t love egg white based cocktails, so this is totally perfect! I adore traveling to the oceans when it’s starting to get cold in the Midwest, so your week sounds perfect! Crossing my fingers for your house buying process 🙂
