First off, I apologize for my absence last week. I had planned to post a recipe on Thursday but it felt so inappropriate with all the shootings last week here in America. I won’t dive deep into it all but I hope you are all staying safe and being kind to others. <3

Moving on to lighter topics, let me just start by saying that I 100% realize the vibe of this post is not very summery at all. It’s honestly been so rainy the past few weeks that I decided it was time to just embrace the moodiness. Instead of denying that the summer showers won’t go away, I hope this post inspires you to embrace them. Let the dark hang over your house, open the windows to let the rain patter on your windowsill, throw on your apron, and begin baking with all bountiful summer fruit popping up at the markets.

These cherry shortbread cookie slices won’t have you slaving away in the kitchen for hours like a pie or cake would but are just as satisfying. I used cherries as we’ve had an endless supply of them at our local co-op but most fresh summer stone fruit or berries would work here. Soaking the cherries in amaretto gives the cookies the most elegant and subtle almond scent that is nothing short of irresistible.

Amaretto Cherry Shortbread Cookies
Easy shortbread slice cookies studded with fresh cherries and scented with amaretto liquor / Adapted from Tutti Dolci

Ingredients
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • Dash of nutmeg
  • 1 Tbsp amaretto (optional)
  • 10 Tbsp unsalted butter , melted
  • Filling:
  • 1/2 cup cherry jam
  • 1/2 cup halved and pitted sweet cherries
  • Amaretto
Instructions
  1. Preheat oven to 350 degrees and grease a 9" tart pan. In a mixing bowl, whisk together flour, granulated sugar, brown sugar, salt, baking soda, cinnamon, and nutmeg. Make a well in the center and pour 1 Tbsp amaretto and melted butter. Use a spatula to fold the dry ingredient into the wet until everything is combined and a crumbly dough as formed.
  2. Set aside 1/3 cup dough in a small bowl and put into the freezer for the time being. Press the remaining dough into the prepared tar and baked for 15 minutes or until lightly browned. Remove from oven and let cool slightly (about ten minutes).
  3. Spread cherry jam evenly over the crust, leaving 1/2 inch border. Scoop the cherry halves out of amaretto and sprinkle them over the jam. Remove the remaining dough from the freezer and sprinkle it over the cherries and jam.
  4. Bake for an additional 30 minutes or until the top has browned. Let cool before slicing and serving.

    This is just gorgeous! I sometimes prefer a summer rain storm, it makes me feel less guilty about staying inside to bake and read all weekend 🙂 Have so much fun on your retreat, bloggers are kind of the best to hang out with (especially the ones who love food!).

    i was so convinced that this looked like a cherry tart with a crumble topping, and was like, how can that be shortbread?? it looks so fancy! but it sounds delicious, and i love that you baked it in a tart pan, and it comes out looking so different from other shortbread!

    As much as I love salads and popsicles and piles of fresh fruit, sometimes I need a break from summer’s aggressive bounty for something a little darker in flavor. These look gorgeous, and I’ll definitely turn on the oven to make them.

    i would say the amaretto is not optional and if you worried about the alcohol content don’t worry it will be cooked off and only the flavor will remain
