I love the idea of a sandwich that showcases fresh tomatoes during their peak seasons but am obviously not going to indulge in bacon as a vegetarian. Instead of turning to processed pre-packed vegetarian bacon (which is an option and one I’ve definetely used in the past), I decided to create a new sandwich that is just as satisfying without leaning on processed fake meat products. And thus, this smoked gouda pimento, lettuce, and tomato sandwich was created!
If you are unfamiliar with pimento cheese dip, it’s a cheese spread commonly seen in the south and is traditionally made with cheddar cheese, pimentos, and mayonnaise. Using smoked gouda in the pimento dip here creates both a buttery and smoky flavor which compliments that fresh juicy tomatoes perfectly. I prefer to use iceberg lettuce on this sandwich since it gives a nice crunch but you could use butter lettuce if it’s what you have on hand. Also, make sure to make this with in-season tomatoes – the flavors in this are so simple that a perfectly textured and flavorful tomato is going to make all the difference! I used a mix of heirloom and cherry tomatoes for my sandwich but you could use roma tomatoes if that is what you have. Also, I like to use a crusty bread for this (think sourdough or focaccia) so that it doesn’t get soggy from the tomatoes.

- 1 cup shredded smoked gouda cheese
- 1 Tbsp cream cheese softened
- 1 Tbsp chopped pimento
- 1/4 cup mayonnaise
- 1/4 tsp salt + more for taste
- dash of pepper
- 4 slices of bread (preferably a sturdy bread like sourdough or ciabatta), toasted
- 4 pieces butter or iceberg lettuce
- 1 large heirloom tomato (or 2 small), sliced

In a medium mixing bowl, mix together the smoked gouda, cream cheese, pimento, mayonnaise, 1/4 tsp salt, and dash of pepper.

Spread the pimento cheese dip evenly among 4 pieces of toasted bread. Top each piece with lettuce and tomatoes. Try a bite and season with more salt and pepper, as needed.
