With all the bars and distilleries being closed, Wyatt and I have really upped our cocktail game at home to try and make our backyard happy hours feel a bit more special. We’ve been keeping a batch of simple syrup in the fridge and juicing lemons and limes so that we can whip up a nightcap or Friday happy hour cocktail in just a few minutes.

For the mango simple syrup in this cocktail, I used frozen mango which I always keep on hand for smoothies. If you don’t have frozen mango, I bet pineapple (frozen or fresh) or strawberries (frozen or fresh) would be delicious in this! If you think of it, make the simple syrup ahead of time so it has plenty of time to sit and absorb the mango flavors – once strained and transferred to an airtight container, it should last about a week in the fridge.

Since most of us are drinking in smaller groups these days, the recipe for this Jalapeño Mango Lime Gimlet only serves one but is super easy to scale up, if needed! If planning to make more than one, still just use one jalapeño to muddle into the tequila. Also, if not making them all at once, don’t clean out the shaker after the first batch and then just reuse the jalapeño in the shaker when you go to make the next batch.

I’m pretty sure traditional tequila gimlets usually include lime cordial but since I didn’t have any on hand and wanted to keep the ingredients simple, I used a healthy dose of lime juice and just relied on the simple syrup for sweetness. Serve this in a nice cocktail glass and make sure to garnish with mint and lime.

Ingredients
For the mango simple syrup:
  • 1 cup chopped 1 inch mango pieces
  • 1 cup water
  • 1 cup granulated sugar
For the cocktail:
  • 2 fluid oz tequila
  • 1 small jalapeño cut into large pieces (leave seeds if you like it spicy)
  • Ice
  • 1/2 fluid oz lime juice
  • 1 fluid oz mango simple syrup
  • mint, lime, and/or jalapeño slice for garnish
Instructions
For the mango simple syrup:
  1. Add the mango, water, and granulated sugar to a medium saucepan and bring to a low boil over high heat. Once boiling, stir to dissolve the sugar and then remove from heat. Cover and let steep for at least 30 minutes.

  2. Pour through a fine mesh strainer to remove the mango solids (which can be discarded). Store syrup in an airtight container in the fridge for up to a week.

For the cocktail:
  1. Combine the tequila and jalapeño in a shaker and use the back of a spoon or a muddler to smash the jalapeño. If you have the time. let this sit for about 5 minutes to help release the jalepeño juices into the tequila.

  2. Next, fill the shaker with ice and then add in the lime juice and simple syrup. Shake until the shaker is very cold.

  3. Strain into a cocktail glass and garnish. Serve right away!
